  1. Lavamos muy bien la carne, ponemos el agua en la olla a fuego lento, partimos la carne al tamaño deseado y agregamos a la olla.
  2. Le ponemos el laurel y la sal al gusto, meneamos y tapamos, la vamos a dejar como 1 hora y 30 minutos.
  3. Le quitamos el rabo y las semillas al chile colorin y al de árbol solo el palo, limpiamos también los ajos y ponemos todo a la licuadora y la llenamos y la tapamos.
  4. Movemos el vaso a modo de enjuagar el chile y le tiramos el agua, volvemos a llenar hasta arriba y tapamos, dejamos remojar.
  5. Cuando haya pasado 1 hora 20 minutos más o menos, que la carne ya se vea blandito o cocida como en la 1 era imagen, pasamos con el chile, le tiramos casi la mitad de agua y le ponemos sal al gusto.
  6. Molemos muy bien y vaciamos a la olla pero con un colador para no pasar los pellejos y semillas que hayan quedado sin moler, si la licuadora muele muy bien, vaciarlo sin colar, meneamos.
  7. Si se nos hace un poco reseco le podemos añadir más agua por si queremos más caldito, yo aquí le agregue un poco más de un litro, rectificamos la sal, lavamos el cilantro.
  8. Lo picamos al gusto, lo agregamos a la olla y meneamos.
  9. Después de agregar el cilantro tapamos y esperamos que hierva por unos 2 minutos y apagamos el fuego.
  10. Lavamos bien los rábanos y retiramos los extremos, lavamos también los limones y el repollo, picamos al gusto, todo esto es para acompañar al igual que las tostadas y los totopos, todo al gusto.
  11. Servimos y listo a disfrutar.
