- 1 cubo caldo de pollo o sal al gusto

- Vamos a poner a calentar una cazuela con bastante agua a fuego alto. Mientras tanto hay que lavar los chiles y quitarles los rabitos.
- En cuanto el agua suelte el hervor, vamos a agregarle los chiles, la cebolla y los ajos y los vamos a dejar hervir por 5 minutos. Pasado el tiempo, apagamos, retiramos de la estufa, tapamos y dejaremos reposar otros 5 minutos.
- En lo que los chiles reposan, vamos a utilizar un sartén pequeño con un chorrito de aceite, ya que vamos a freír las semillas y la tortilla.. en cuanto el aceite esté caliente, freímos las semillas solo hasta que se vean doraditas ligeramente, porque si se nos pasan de tueste o se nos queman, el pipián va a quedar amargoso. Quitamos las semillas y seguimos con la tortilla, dejándola casi a punto de totopo.
- Ya con las semillas y la tortilla fritas, las vamos a añadir en la licuadora junto con los chiles, la cebolla y los ajos con todo y su agua de cocción (por eso es importante lavar los chiles muy bien).
- Vamos a licuar todo muy bien, que quede todo bien molido. Ya licuado, vamos a calentar poquito aceite en un sartén u olla y vamos a vaciar el pipián ahí pero lo vamos a colar. No queremos ni los pedacitos de chile ni las semillas que no se alcanzan a licuar bien.
- Vamos a dejarlo que hierva unos dos minutos y ya le podemos agregar lo que queramos. Podemos usar pollo, carne de puerco, tortitas de camarón o de papas, huevo.. o sólo dejarlo así como tipo salsa.
