En casa somos bastante fans de la gastronomía mexicana, así que aprovechando el finde me puse manos a la obra con esta receta riquísima de cochinita pibil. - Para el cerdo y su marinado:
- 1 trozo cabezada de lomo de cerdo (el mio era de unos 1,7 kg)
- 100 g pasta de achiote
- El zumo de 2 naranjas
- El zumo de 1 limón

- 1/2 vaso vino blanco
- 2 hojas laurel
- 1 cdita Pimienta negra
- 1/2 cdita canela molida
- 1-2 dientes ajo
- Sal
- 1 chorro aceite o manteca de cerdo
- Para la cebolla encurtida:
- 1 cebolla roja
- 1/2 limón
- 1 lima
- 1/2 naranja
- 1 chorro vinagre
- 1 cda azúcar
- Para formar los tacos:

- Cilantro fresco
- Gajos de lima

- El día antes de preparar la cochinita, marinamos la carne. Para ello cortamos en trozos no demasiado grandes y ponemos en un recipiente que después se pueda cerrar herméticamente.
- Preparamos el marinado: En un vaso batidor ponemos la pasta de achiote y todos los demás ingredientes del marinado. Una vez triturado, echamos esa mezcla sobre la carne, damos unas vueltas y dejamos tapado marinando en la nevera hasta el día siguiente.
- Para la cebolla: Cortamos en rodajas finas la cebolla morada y le añadimos los ingredientes del encurtido. Al igual que la carne tapamos y dejamos en la nevera hasta el día siguiente que tendrá un resultado como en la tercera foto ¡Buenísima y súper suave!
- ¡Vamos a cocinar la carne! Ponemos o bien en horno o en una olla al fuego la carne con parte del jugo del marinado (no todo, como la mitad) y dejamos tapado a fuego bajito unas 3-4 horas. Pasado ese tiempo con ayuda de un tenedor vamos deshilachando la carne y subimos un poquito el fuego unos 30-40 min restantes para que termine de absorber el jugito y quede una carne tierna y jugosa.
- Las tortillas de tacos generalmente suelen ir planas, podrías dejarlas así o darles forma para que sea más sencillo rellenarlas. Para ello, ponlas como en la foto ayudándote de la rejilla del horno (para que no se escapen por debajo pon la bandeja). Mételas al horno a unos 200ºC durante unos 5 minutos aproximadamente, lo justo para que cojan esa formita.
- En el momento de servir, rellena las tortillas de tacos con tu carne de cochinita pibil, pon un poquito de cebolla encurtida, cilantro fresco y un gajo de lima para que cada uno le ponga en función de si le gusta o no y a comer ¡Espero que os guste!
